- 1 1/2 c. sifted flour
- 1 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 c. sugar
- 3/4 c. cooking oil
- 2 eggs
- 1 1/2 c. shredded carrots
- 2 c. finely chopped walnuts
- powdered sugar
Directions

1Sift together flour, baking soda, cinnamon, nutmeg and salt. Set aside.

2Combine sugar, oil and eggs in mixing bowl.

3Beat with electric mixer.

4Add dry ingredients, stirring until moistened. Stir in carrots and walnuts.

5Pour batter into greased loaf pan. Bake 55 minutes at 350°.
