  • 1 1/2 lb. carrots, sliced, cooked and drained
  • 15 Ritz crackers
  • 1 stick (1/4 lb.) butter
  • 4 to 6 oz. Velveeta cheese
  • 1 Tbsp. water

Directions

    Place cooked carrots in casserole.

    Melt 1/2 stick butter, cheese and 1 tablespoon water; pour over cooked carrots.

    Crumble 15 crackers and melt other 1/2 stick butter; mix together.

    Put cracker mixture on top of carrot mixture and bake at 350°

    until it bubbles, about 25 minutes.
