- 1 lb. carrots
- 1/4 c. butter, melted
- 1/4 c. pineapple or orange juice
- 2 Tbsp. brown sugar
- 1/4 tsp. dry mustard
- 1 tsp. salt
- almonds (for garnish, optional; pecans are okay)
Directions

1Scrape carrots; cut into diagonal slices, about 1/4 to 1/2-inch thick.

2Place in ungreased baking dish.

3Stir together butter, juice, sugar, mustard and salt.

4Pour over carrots.

5Cook, covered, 30 to 40 minutes at 375° until carrots are tender.

6If using microwave, cook carrots with small amount of water until almost done, add sauce and cook 2 or 3 more minutes.

7Garnish with toasted almonds or pecans.

8Serves 4.
