Ingredients

  • 1 lb. carrots
  • 1/4 c. butter, melted
  • 1/4 c. pineapple or orange juice
  • 2 Tbsp. brown sugar
  • 1/4 tsp. dry mustard
  • 1 tsp. salt
  • almonds (for garnish, optional; pecans are okay)

Directions

    Scrape carrots; cut into diagonal slices, about 1/4 to 1/2-inch thick.

    Place in ungreased baking dish.

    Stir together butter, juice, sugar, mustard and salt.

    Pour over carrots.

    Cook, covered, 30 to 40 minutes at 375° until carrots are tender.

    If using microwave, cook carrots with small amount of water until almost done, add sauce and cook 2 or 3 more minutes.

    Garnish with toasted almonds or pecans.
