- 1 lb. carrots, sliced thin
- 1/4 c. raisins
- 1/4 c. oleo or butter
- 3 Tbsp. honey
- 1 Tbsp. lemon juice
- 1/4 tsp. ground ginger
- 1/4 c. sliced almonds, unpeeled
Directions

1Cook carrots in 1/2-inch boiling water for 8 minutes.

2Drain. Turn carrots into a 1-quart baking dish.

3Stir in raisins, oleo, honey, lemon juice and ginger.

4Bake, uncovered, in a 375° oven for 35 minutes.

5Stir occasionally; spoon into serving bowl. Sprinkle with almonds.

6Makes 4 servings.
