  • 1 lb. carrots, sliced thin
  • 1/4 c. raisins
  • 1/4 c. oleo or butter
  • 3 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1/4 tsp. ground ginger
  • 1/4 c. sliced almonds, unpeeled

Directions

    Cook carrots in 1/2-inch boiling water for 8 minutes.

    Drain. Turn carrots into a 1-quart baking dish.

    Stir in raisins, oleo, honey, lemon juice and ginger.

    Bake, uncovered, in a 375° oven for 35 minutes.

    Stir occasionally; spoon into serving bowl. Sprinkle with almonds.
