- 3 c. pared and sliced carrots
- 1 chicken bouillon cube
- 12 buttery round crackers, crushed (Ritz-type)
- 2 Tbsp. minced onion
- 2 Tbsp. softened butter
- grated Cheddar cheese
Directions

1Cook carrots in water with bouillon cube until almost done. Drain and save liquid.

2Coarsely mash carrots. Add crushed crackers, onion, butter and 2/3 cup reserved liquid.

3Mix well. Place in a small buttered baking dish.

4Cover with grated cheese. Bake at 450° for 15 to 20 minutes.

5Serves 6 to 8.
