  • 3 c. pared and sliced carrots
  • 1 chicken bouillon cube
  • 12 buttery round crackers, crushed (Ritz-type)
  • 2 Tbsp. minced onion
  • 2 Tbsp. softened butter
  • grated Cheddar cheese

Directions

    Cook carrots in water with bouillon cube until almost done. Drain and save liquid.

    Coarsely mash carrots. Add crushed crackers, onion, butter and 2/3 cup reserved liquid.

    Mix well. Place in a small buttered baking dish.

    Cover with grated cheese. Bake at 450° for 15 to 20 minutes.

    Serves 6 to 8.
