- 1 lb. boneless chicken, cubed
- 1 Tbsp. soy sauce
- 1 Tbsp. cornstarch
- 1 small onion, cubed
- 1 (16 oz.) pkg. frozen oriental vegetables
- 2 Tbsp. cornstarch, dissolved in 4 Tbsp. soy sauce and 1/2 c. water
- 1 c. cashews
- 2 Tbsp. oil for stir-frying
Directions

1Marinate chicken in soy sauce and cornstarch; let stand 20 minutes.

2Prepare vegetables according to package directions. Stir-fry chicken and onion 2 to 3 minutes or until chicken is white.

3Add prepared vegetables.

4Stir in cornstarch mixture; cook until thickened.
