  • 12 cup beef broth or 12 cup chicken
  • 2 tablespoons carrots, shredded
  • 2 tablespoons celery, finely chopped
  • 2 tablespoons onions, minced
  • 1 garlic clove, minced (small)
  • 1 12 teaspoons butter
  • 18 teaspoon black pepper
  • 12 cup instant rice, uncooked
  • 18 cup cashews, chopped

Directions

    In a small saucepan, combine broth, carrot, celery, onion, garlic, butter and black pepper.

    Bring to a boil; lower heat and simmer for 3-5 minutes then remove from the heat.

    Stir in rice; cover and let it stand for 5 minutes or until the liquid is absorbed.

    Sprinkle with cashews and some fresh minced parsley.
