- 12 cup beef broth or 12 cup chicken
- 2 tablespoons carrots, shredded
- 2 tablespoons celery, finely chopped
- 2 tablespoons onions, minced
- 1 garlic clove, minced (small)
- 1 12 teaspoons butter
- 18 teaspoon black pepper
- 12 cup instant rice, uncooked
- 18 cup cashews, chopped
Directions

1In a small saucepan, combine broth, carrot, celery, onion, garlic, butter and black pepper.

2Bring to a boil; lower heat and simmer for 3-5 minutes then remove from the heat.

3Stir in rice; cover and let it stand for 5 minutes or until the liquid is absorbed.

4Sprinkle with cashews and some fresh minced parsley.
