  • 1 1/2 lb. catfish fillets
  • 2 eggs, beaten or 1/2 c. egg substitute
  • 1 large potato, cooked and mashed
  • 1 large onion, chopped
  • 1 to 2 Tbsp. chopped, fresh parsley
  • 2 to 3 drops hot pepper sauce
  • 1 garlic clove, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. dried basil
  • 2 c. finely crushed butter flavor crackers

    Poach or bake catfish fillets.

    Drain and refrigerate.

    Flake cooled fish into large mixing bowl.

    Add eggs, potato, onion, parsley, hot pepper sauce, garlic, salt, pepper and basil and mix well.

    Shape into 8 patties.

    Coat with cracker crumbs.

    Heat small amount of oil in a large skillet.

    Cook patties, a few at a time, until browned and heated through.

    Serve with tartar sauce, if desired.
