- 1 1/2 lb. catfish fillets
- 2 eggs, beaten or 1/2 c. egg substitute
- 1 large potato, cooked and mashed
- 1 large onion, chopped
- 1 to 2 Tbsp. chopped, fresh parsley
- 2 to 3 drops hot pepper sauce
- 1 garlic clove, minced
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. dried basil
- 2 c. finely crushed butter flavor crackers
Directions

1Poach or bake catfish fillets.

2Drain and refrigerate.

3Flake cooled fish into large mixing bowl.

4Add eggs, potato, onion, parsley, hot pepper sauce, garlic, salt, pepper and basil and mix well.

5Shape into 8 patties.

6Coat with cracker crumbs.

7Heat small amount of oil in a large skillet.

8Cook patties, a few at a time, until browned and heated through.

9Serve with tartar sauce, if desired.
