  • 6 skinned, pan-dressed catfish (fresh or frozen)
  • 1 c. dry breadcrumbs or croutons
  • 3/4 c. grated Parmesan cheese
  • 1/4 c. chopped parsley
  • 1 tsp. paprika
  • 1/2 tsp. whole oregano
  • 1/4 tsp. leaf basil
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. melted butter or margarine
  • lemon wedges
  • parsley sprigs

    Thaw frozen fish.

    Clean, wash and dry fish.

    Combine breadcrumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper.
