Catfish Parmesan

  • 3/4 c. dry bread crumbs
  • 3 Tbsp. grated Parmesan cheese
  • 2 Tbsp. chopped fresh parsley
  • 1/2 tsp. salt
  • 1/4 tsp. paprika
  • 1/8 tsp. EACH pepper, dried oregano, and basil
  • 6 fresh or frozen catfish fillets, 3 - 5 oz. each
  • 1/2 c. butter, melted

Directions

    In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley and seasonings.

    Dip catfish in butter, then in crumb mixture.

    Arrange in a greased 9 x 13 inch pan.

    Bake uncovered at 375° for 20-25 minutes, or until fish flakes easily with a fork. Serves 6.
