Catfish Stew

  • 1/2 lb. bacon
  • 3 lb. potatoes, peeled and sliced in 1-inch thick pieces
  • salt and pepper to taste
  • 3 lb. catfish, filleted
  • 1 large onion, sliced into 1/4-inch pieces
  • 2 c. water

Directions

    Using large pot, fry the bacon.

    Cut heat to low and add a layer of potatoes, salt and pepper.

    Add a layer of fish, salt and pepper, then a layer of onion.

    Continue in layers until all ingredients are in the pot.

    Add water and cover.

    Leave on low heat until fish and potatoes are cooked for approximately 30 minutes after water starts steaming.

    Serves 4 to 6.
