- 1/2 lb. bacon
- 3 lb. potatoes, peeled and sliced in 1-inch thick pieces
- salt and pepper to taste
- 3 lb. catfish, filleted
- 1 large onion, sliced into 1/4-inch pieces
- 2 c. water
Directions

1Using large pot, fry the bacon.

2Cut heat to low and add a layer of potatoes, salt and pepper.

3Add a layer of fish, salt and pepper, then a layer of onion.

4Continue in layers until all ingredients are in the pot.

5Add water and cover.

6Leave on low heat until fish and potatoes are cooked for approximately 30 minutes after water starts steaming.

7Serves 4 to 6.
