  • 2 (9-inch) deep dish pie shells
  • 2 pkg. chopped spinach
  • 1/4 c. chopped onion
  • 1 1/2 to 2 Tbsp. nutmeg
  • 2 1/2 c. half and half
  • 1/2 lb. sharp Cheddar cheese, diced or cubed
  • 1/2 lb. Monterey Jack cheese, diced
  • 6 strips bacon
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 6 regular size eggs

Directions

    Cook spinach in microwave or steam on top of stove until done. Drain.

    Cook pie shells in oven at 375°.

    Cover edges of pie shell with aluminum foil; follow directions on package to cook pie shells.
