- 2 (9-inch) deep dish pie shells
- 2 pkg. chopped spinach
- 1/4 c. chopped onion
- 1 1/2 to 2 Tbsp. nutmeg
- 2 1/2 c. half and half
- 1/2 lb. sharp Cheddar cheese, diced or cubed
- 1/2 lb. Monterey Jack cheese, diced
- 6 strips bacon
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 6 regular size eggs
Directions

1Cook spinach in microwave or steam on top of stove until done. Drain.

2Cook pie shells in oven at 375°.

3Cover edges of pie shell with aluminum foil; follow directions on package to cook pie shells.
