Cauliflower Casserole

  • 1 head cauliflower
  • 1/4 c. melted butter (margarine)
  • 1 Tbsp. sugar
  • 1/2 tsp. salt and pepper
  • 3/4 c. cracker crumbs
  • 1 (16 oz.) can tomatoes
  • 1 medium onion
  • 1 1/2 c. shredded Cheddar cheese

Directions

    Cook cauliflower for 5 minutes in boiling water.

    Drain. Combine the next 5 items.

    Stir in tomatoes, onion, 1 1/4 cups cheese and cauliflower.

    Put in a 2-quart casserole dish.

    Top with 1/4 cup cheese. Bake for approximately 1 hour at 350°.
