Cauliflower Mash

Ingredients

  • 1 large cauliflower, broken into florets
  • 1 ounce butter or 2 tablespoons olive oil
  • 2 -3 tablespoons soymilk
  • 1 pinch salt and pepper
  • 1 pinch grated nutmeg (optional)

Directions

    Bring 2 inches water to a boil in a large saucepan.

    Put in the cauliflower florets, bring back to a boil, cover and cook for 5-7 minutes, until the cauliflower is tender.

    Drain well.

    Put the cauliflower into a food processor with the butter or olive oil, soy milk and salt and pepper and grated nutmeg if using.

    Whiz until you get a smooth, thick consistency.

    Return to the saucepan and gently reheat, stirring so that it doesn't catch, then serve.
