Cauliflower Mashed Potatoes

  • 1 head of fresh cauliflower
  • 14 cup of low fat margarine or 14 cup butter
  • 4 ounces low-fat cream cheese
  • 2 tablespoons of minced garlic
  • 2 tablespoons of chopped chives
  • 34 cup parmesan cheese
  • salt and pepper

Directions

    Steam the cauliflower in a bit of water until it gets really soft and mushy.

    Put the cauliflower minus the stem part into a large mixing bowl.

    Add the rest of the ingredients.

    Beat with a hand mixer until you get the consistency of creamy mashed potatoes.

    Serve immediately.

    Leftovers may be reheated in the in the microwave and taste just as good if not better the next day!
