- 1 head of fresh cauliflower
- 14 cup of low fat margarine or 14 cup butter
- 4 ounces low-fat cream cheese
- 2 tablespoons of minced garlic
- 2 tablespoons of chopped chives
- 34 cup parmesan cheese
- salt and pepper
Directions

1Steam the cauliflower in a bit of water until it gets really soft and mushy.

2Put the cauliflower minus the stem part into a large mixing bowl.

3Add the rest of the ingredients.

4Beat with a hand mixer until you get the consistency of creamy mashed potatoes.

5Serve immediately.

6Leftovers may be reheated in the in the microwave and taste just as good if not better the next day!
