Cauliflower Mashed Potatoes

  • 1/2 heads Cauliflower, Cut Into Large Sections
  • 4 whole Large Potatoes
  • 1/2 cups Cheddar Cheese, Shredded
  • 1/2 cups Sour Cream
  • 1 Tablespoon Chives
  • Salt And Pepper, to taste

Directions

    In a large pot, place cauliflower sections and potatoes. Cover with water. Boil until tender. Drain water.

    Add shredded cheese, sour cream, and chives. Mash. And salt and pepper to taste. You may use more or less sour cream, depending on how loose you like your potatoes. Add it a little at a time until you reach the desired consistency.

    Serves 2-4 people, depending on how much they usually eat.
