  • 8 cups cauliflower florets (1 head))
  • -2 Tbsp extra virgin olive oil
  • -1/2 tsp Kosher salt
  • -1/2 tsp. ground black pepper
  • -2 Tbsp butter
  • -2 Tbsp flour
  • -1.5 cups fat-free milk
  • -1/2 cup heavy cream
  • -1/4 tsp table salt
  • -1 cup grated sharp cheddar cheese (reduced fat optional)
