Ingredients
- 3 medium heads cauliflower florets
- 2 c. chopped onion
- 1 c. red pepper, cut in strips
- 1/4 c. salt
- 2 qt. ice cubes
- 1 qt. vinegar (white)
- 2 c. sugar
- 1 Tbsp. mustard seed
- 1 tsp. celery seed
- 1 tsp. turmeric
- 1 tsp. hot red pepper
Directions

1Wash cauliflower and divide into florets.

2Combine onions, red pepper and salt; cover with ice cubes.

3Let set 3 to 4 hours. Drain well.

4Combine with remaining ingredients.

5Bring to a boil. Add cauliflower and onions.

6Boil 10 minutes or until vegetables are tender.

7Remove red pepper and pack vegetables into hot jars. Cut red pepper into pieces and put in each jar.

8Yield: 5 pints.
