Cauliflower Soup

  • 4 Tbsp. chopped onions
  • 1/4 c. margarine
  • 2 Tbsp. all-purpose flour
  • 4 c. milk, scalded
  • 1 tsp. salt
  • dash of pepper
  • 1 medium head cauliflower, cooked and coarsely chopped
  • 1 c. shredded sharp Cheddar cheese

Directions

    Saute onion in margarine until tender.

    Blend in flour.

    Cook 3 to 4 minutes without browning.

    Add scalded milk, seasonings and cauliflower.

    Cook until smooth and slightly thick, stirring frequently. Just before serving, add shredded cheese and stir until melted.
