- 3 Tbsp. butter or margarine
- 3 Tbsp. all-purpose flour
- 1/8 tsp. nutmeg
- 3 2/3 c. canned chicken broth
- 1 c. water
- 3 c. small cauliflowerets
- 1 egg yolk
- 3 Tbsp. heavy cream
- snipped parsley
Directions

1In medium saucepan, melt butter or margarine.

2Blend in flour and nutmeg.

3Slowly stir in chicken broth and water.

4Then bring to a boil, while stirring.

5Now add cauliflowerets, then simmer soup, covered, about 25 minutes or until cauliflowerets are tender.
