  • 4 hard-cooked eggs
  • 4 Tbsp. softened butter
  • 1 medium onion, finely chopped
  • 1 Tbsp. mayonnaise
  • 2 Tbsp. chopped parsley
  • 1 (4 oz.) jar caviar
  • 1 c. sour cream
  • juice of 1/2 lemon

    Mash hard-cooked eggs.

    Mix with butter and half of chopped onion.

    Spread evenly on the bottom of a 9-inch pie plate. Refrigerate for at least 1/2 hour.

    Blend mayonnaise with chopped parsley.

    Spread over egg mixture.

    Spread sour cream over parsley and mayonnaise layer.

    Combine caviar, chopped onion and lemon juice.

    Gently drain caviar mixture and spread over sour cream just before serving.

    Garnish with parsley.

    Serve with crackers.
