- 4 hard-cooked eggs
- 4 Tbsp. softened butter
- 1 medium onion, finely chopped
- 1 Tbsp. mayonnaise
- 2 Tbsp. chopped parsley
- 1 (4 oz.) jar caviar
- 1 c. sour cream
- juice of 1/2 lemon
Directions

1Mash hard-cooked eggs.

2Mix with butter and half of chopped onion.

3Spread evenly on the bottom of a 9-inch pie plate. Refrigerate for at least 1/2 hour.

4Blend mayonnaise with chopped parsley.

5Spread over egg mixture.

6Spread sour cream over parsley and mayonnaise layer.

7Combine caviar, chopped onion and lemon juice.

8Gently drain caviar mixture and spread over sour cream just before serving.

9Garnish with parsley.

10Serve with crackers.
