Ingredients

  • 1/4 pounds Unsalted Butter
  • 1/2 cups Sugar
  • 1 whole Egg
  • 1 cup Stone Ground Cornmeal
  • 1 cup All-purpose Flour
  • 4 teaspoons Baking Powder
  • 1/4 teaspoons Freshly Grated Nutmeg
  • 1 cup Milk

Directions

    In a bowl, cream together butter and sugar. Add beaten egg.

    In a second bowl, combine cornmeal, flour, baking powder and nutmeg. Add wet ingredients to the second bowl plus the milk and stir until combined and there are no lumps.

    Grease an 8x8 baking dish and pour batter into the dish.

    Bake at 425 degrees for 20-25 minutes.

    To add insult to injury, I've served this with honey butter. Oh my!
