Celeriac Soup

Ingredients
- 1 medium celeriac
- 1 onion, cut any way you like
- 2 slices bacon, roughly chopped
- 15 g butter (1 Tbsp)
- 2 Tbsp whole grain mustard
- 2 sprigs thyme (fresh if possible)
Directions

1Melt the butter in a pot and cook the onions on low heat.

2Once the onions become translucent, add the bacon and continue cooking.

3Cut the celeriac into bite-sized pieces and add to the pot together with enough water to completely cover everything.

4Cook until softened and add the thyme.

5Once the celeriac has cooked, mix in the whole grain mustard and stop the heat.

6Allow to cool.

7Once it's cooled a bit, add the coriander or parsley, and blend it in a blender.

8If it's a bit thick here adjust it by adding a little water.

9Reheat before eating and enjoy.
