Ingredients

  • 3 tbsp oil (any type but i used olive oil)
  • 1 onion finely chopped
  • 2 clove gallic crunched
  • 50 grams ginger grated
  • 2 green bed eye chillies deseeded and chopped
  • 2 tbsp curry powder
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 6 large carrots (scrubbed not peeled tailed and topped )grated
  • 2 tbsp tomato paste
  • 400 grams diced tomatoes
  • 400 grams baked beans
  • 2 sprigs of fresh thymes leaves only
  • 1 tsp seasoning
  • 1 tsp ground black pepper
  • pinch salt to taste

Directions

    In a pot put the oil add the onion whn the oil is properly heated and make sure the onion is translucent

    Add half of the ginger(reserve the other half for the end of the cooking)add gallic and the chilles

    Add the curry powder

    Add all the bell peppers and cook for 2 minutes

    Add carrots gradually and stir continously making sure the ingredients blend

    Add tomato paste and diced tomatoes... Stir and cook for 5-10min or until it's thick and we'll combined

    Put down from the heat,add baked beans, fresh chopped thymes and the remaining ginger and stir...

    You can serve hot or cold....you can eat it with any food or can eat it alone...

    I ate my own with semolina but maybe sister prefer bread
