  • 3 or 4 lb. roast
  • 6 c. dry pinto beans
  • 1 c. chopped onion
  • 4 Tbsp. chili powder
  • 2 Tbsp. cumin
  • 3 Tbsp. oregano
  • 1/2 tsp. garlic
  • 1/4 oz. can green chilies
  • 14 c. water

    Boil roast in water.

    Cool and take fat off roast.

    Cut into small pieces.

    Add roast and dry beans to broth.

    Add other ingredients and cook until tender.

    Add more water as needed. Serve over corn chips.

    Top with lettuce, tomatoes, cheese and taco sauce.
