  • 3 lb. pork roast, cut in bite size pieces
  • 1 lb. pinto beans, soaked in water overnight
  • 3 cloves garlic, chopped
  • 3 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. oregano
  • 1 (4 oz.) can chopped green chillies
  • 1 (12 oz.) jar mild chunky salsa
  • salt to taste
  • corn chips
  • shredded cheese
  • chopped tomatoes
  • shredded lettuce

Directions

    Mix first 9 ingredients together.

    Place in slow cooker. Cover with water (reduce water slightly if beans are presoaked). Cover cooker.

    Cook on high for 5 hours.

    Serve in layers of corn chips, meat mixture, cheese, tomato, lettuce and taco sauce. Yields 15 servings.
