- 3 to 5 lb. boneless pork roast (or 1 small beef roast and 1 small pork roast)
- 2 lb. pinto beans
- 1 minced garlic clove
- 1 to 2 tsp. chile powder
- 1 tsp. cumin
- 1 tsp. oregano
- 2 cans (7 oz.) diced green chiles
- 2 Tbsp. salt
- 1 onion
- 3 stalks celery
- 2 cans chile salsa
- big pinch of celery salt
Directions

1Cover all ingredients with water.

2Cook 6 hours, covered. Stir and add water as needed.

3Remove lid; cook 1 more hour.

4Meat will fall apart.

5Serve over tortilla chips.

6Add grated cheese, lettuce, tomato, onion and avocado.
