  • 2 tablespoons flour
  • 14 teaspoon salt
  • 14 teaspoon pepper
  • 2 boneless skinless chicken breasts
  • 1 12 teaspoons olive oil
  • 3 medium carrots, cut into 1 inch pieces
  • 1 (750 ml) bottledry champagne
  • 3 cups canned chicken broth
  • 34 teaspoon salt
  • 12 teaspoon dried thyme
  • 14 teaspoon pepper
  • 2 tablespoons minced fresh parsley

Directions

    Mix flour, salt and pepper in plastic food bag.

    Add chicken and shake until lightly coated.

    Heat oil in Dutch oven.

    Add chicken and cook, turning once or twice, for about 10 minutes or until golden brown.

    Add remaining ingredients and bring to a boil.

    Reduce heat and simmer 40 minutes, or until chicken is cooked through and tender.
