Chantilly Mashed Potatoes

  • 6 Russet potatoes (3 lb.)
  • 1/4 c. butter, softened
  • 3/4 c. milk, warmed
  • 3/4 c. chilled heavy cream
  • 1 c. grated Swiss cheese
  • 3 Tbsp. Parmesan cheese

Directions

    Preheat oven to 400°.

    Wash potatoes and prick several times with a fork. Bake 45 minutes to 1 hour.

    Halve lengthwise and cool until can be handled. Scoop out potatoes into bowl. Spread in a shallow 3-quart gratin dish.

    Increase oven temperature to 500°. Whip the cream to soft peaks and fold in Swiss cheese. Spread cream mixture over potatoes and sprinkle with Parmesan.

    Bake approximately 10 minutes until top is browned.
