- 6 Russet potatoes (3 lb.)
- 1/4 c. butter, softened
- 3/4 c. milk, warmed
- 3/4 c. chilled heavy cream
- 1 c. grated Swiss cheese
- 3 Tbsp. Parmesan cheese
Directions

1Preheat oven to 400°.

2Wash potatoes and prick several times with a fork. Bake 45 minutes to 1 hour.

3Halve lengthwise and cool until can be handled. Scoop out potatoes into bowl. Spread in a shallow 3-quart gratin dish.

4Increase oven temperature to 500°. Whip the cream to soft peaks and fold in Swiss cheese. Spread cream mixture over potatoes and sprinkle with Parmesan.

5Bake approximately 10 minutes until top is browned.
