  • 2 container old-fashioned rolled oats
  • 8 oz. slivered almonds
  • 8 oz. shelled pumpkin seeds
  • 8 oz. sunflower seeds
  • 2 tbsp. ground cinnamon
  • 1/2 c. extra-virgin olive oil
  • 1/2 c. maple syrup
  • 1/2 c. honey
  • 1 c. walnut pieces
  • 1 c. currants

Directions

    Preheat oven to 325 degrees F. Line 2 to 3 large jellyroll pans with foil; lightly coat with cooking spray.

    In large bowl, toss oats, almonds, pumpkin seeds, sunflower seeds, and cinnamon.

    Add olive oil, maple syrup, and honey and toss until evenly coated.

    Divide among prepared pans and bake 45 minutes, or until golden, stirring once.

    Transfer to wire racks to cool.

    When mostly cooled, add walnuts and currants and toss to combine.

    Store in an airtight container at room temperature or in freeze.

    Serve with fresh fruit and yogurt, if desired.
