Charleston Squash Casserole

- 6 or 8 small squash
- 2 Tbsp. butter or margarine
- 1 chicken bouillon cube
- 1 Tbsp. grated onion
- 1 egg, well beaten
- 1/2 c. bread crumbs
- 1/2 c. grated sharp cheese
- 1 c. sour cream
- salt
- pepper
- paprika
Directions

1Cut and cook squash in small amount of water until tender; mash well.

2Add salt, pepper, butter, bouillon cube and grated onion.

3Fold in well beaten egg.

4Fold in sour cream.

5Pour into a 1-quart casserole which has been greased.

6Sprinkle a topping of crumbs, cheese and paprika over casserole.

7Bake in an oven preheated to 350° for 30 minutes.
