Charleston Squash Casserole

Ingredients

  • 6 or 8 small squash
  • 2 Tbsp. butter or margarine
  • 1 chicken bouillon cube
  • 1 Tbsp. grated onion
  • 1 egg, well beaten
  • 1/2 c. bread crumbs
  • 1/2 c. grated sharp cheese
  • 1 c. sour cream
  • salt
  • pepper
  • paprika

Directions

    Cut and cook squash in small amount of water until tender; mash well.

    Add salt, pepper, butter, bouillon cube and grated onion.

    Fold in well beaten egg.

    Fold in sour cream.

    Pour into a 1-quart casserole which has been greased.

    Sprinkle a topping of crumbs, cheese and paprika over casserole.

    Bake in an oven preheated to 350° for 30 minutes.
