  • 1 beef tenderloin, trimmed
  • Montreal steak seasoning

    Trim tenderloin and place in shallow baking dish.

    Season and place fat layer that was trimmed on top of meat.

    Preheat oven to 500 degrees. Place meat in oven and reduce heat to 300 degrees. Bake for 1 hour.

    Remove meat and let rest for 15 min. While meat is resting pour juice from pan into saucepan and add a little water. Cook until reduced and pour over meat. Slice and serve.

    Options: stab little holes into meat and stuff with blue cheese or garlic.
