Ingredients
- 1 1/2 lb beef stew cubes
- 1 tbsp peanut oil
- 1 medium onion, chopped
- 1 tbsp butter
- 3 clove garlic, minced
- 1 can coconut milk (13.5 oz)
- 1 can diced tomatoes (14.5 oz)
- 1/2 cup warm water
- 1 tbsp parsley
- 1 1/2 tbsp mild curry powder, heaping
- 1 1/2 tbsp paprika
- 1/2 tsp salt
- 1/4 tsp ground cinnamon
- 1 salt and pepper to taste
Directions

1Salt and pepper beef cubes.

2Sear beef in peanut oil in large skillet.

3Remove beef, set aside.

4In same skillet - add onions, garlic and butter.

5Saute for about 5 minutes.

6Add tomatoes, undrained.

7Add coconut milk.

8Add 1/2 cup warm water to empty coconut milk can, mixing and scraping any milk left over at bottom and on sides - add to skillet.

9Add remaining ingredients and beef.

10Over medium-high heat bring everything to a boil, stirring often.

11Cover, reduce heat to low and simmer for 1 1/2 - 2 hours, stirring occasionally, until beef is tender.

12I serve this with jasmine rice.

13This is also good over diced potatoes or chick peas.
