- 1 chateaubriand
- 3 sprigs of rosemary
- 3 tbsp cracked black peppercorns
- 2 tsp kosher salt
- 1/4 cup garlic
- 3 tbsp butter
- 1 tbsp olive oil
Directions

1Wrap chateaubriand tightly in clean towel.

2Pound with mallet.

3Preheat oven to 300 F.

4Make paste out of rosemary, garlic, salt, pepper and olive oil.

5I used a food processor to do this.

6Rub paste onto meat.

7Melt 1 tsp.

8Of olive oil and butter in oven - proof pan.

9I used a cast iron pan.

10Brown meat on both sides.

11Transfer pan to oven.

12Cook until internal temperature is 125F.

13About 20 to 30 minutes.

14Let meat rest for 5 minutes.

15Pour butter in pan over meat.

16Meat should be rare, but if it is overdone it will still be good.
