- 1 red bell peppers (whatever you're in the mood for) or 1 hot pepper (whatever you're in the mood for)
- 12 white onion
- 1 large tomatoes
- 1 cup black beans, dry
- 1 cup pinto beans, dry
- 1 (32 ounce) bag corn chips
- 2 garlic cloves
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 2 teaspoons salt
- 2 teaspoons sugar
Directions

1Soak beans in a bowl full of plenty of water overnight.

2Drain and rinse beans and put into a large pot of boiling water, reduce heat, cover, and simmer for about 2 hours or until done.

3Add water as needed--you cannot add too much water!

4Dice the onion, tomato, pepper, and garlic.

5Add garlic, onions, salt, and oil to a fry pan over medium heat.

6Saute for about 5 minutes.

7Add other vegetables and sugar and raise heat to medium-high, saute for another 5 minutes.

8Saute longer if you want mushier veggies (some kids will prefer this).

9Add beans and chili powder and cook until heated through, then reduce heat to low, cover, and let it sit for about 5 minutes.

10Serve hot over corn chips.

11Put some fresh cilantro on top if you have it!
