- 3 thick slices applewood smoked bacon, chopped
- 1 cup minced onion
- 3 tbsp flour
- 1/8 to 1/4 teaspoon cayenne pepper
- 1 1/2 cup chicken broth
- 1 1/2 cup whole milk or half and half
- 7 1/2 - 8 ounces shredded cheddar cheese
Directions

1Cook bacon in a large saucepan over medium heat until crispy.

2Use a slotted spoon to transfer bacon to a paper towel lined plate.

3Set aside.

4Pour off all but 2 tablespoons drippings from saucepan.

5Cook onion in drippings, stirring occasionally, until tender, 4 to 5 minutes.

6Add flour and cayenne pepper; cook and stir 1 minute.

7Stir in milk and broth.

8Bring to a boil over high heat, stirring occasionally.

9Reduce heat and simmer for 5 minutes, stirring occasionally.

10Remove from heat and stir in 1 1/2 cups cheese until melted.

11Ladle into bowls and top with reserved bacon and remaining cheese.
