Cheddar Biscuits with Smithfield Ham

- 1 3/4 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons solid vegetable shortening
- 1/2 cup shredded cheddar cheese
- 3/4 cup buttermilk
- 1/2 cup chopped green onions
- Butter
- 1/2 pound thinly sliced Smithfield ham or Black Forest ham
Directions

1Preheat oven to 425F.

2Lightly butter 2 cookie sheets.

3Combine flour, baking powder and salt in bowl.

4Add shortening and cut in until mixture resembles coarse meal.

5Stir in cheese.

6Add buttermilk and onions and mix well.

7Turn out dough onto lightly floured surface and roll out to thickness of 1/2 inch.

8Cut out biscuits using 1 1/2-inch round biscuit butter.

9Gather scraps and reroll.

10Cut out additional biscuits.

11Transfer biscuits to prepared cookie sheets.

12Bake until puffed and light golden, about 15 minutes.

13Cool on rack.

17Split and lightly butter biscuits.
