- 2 Tbsp. butter or margarine
- 2 Tbsp. minced onion
- 1 Tbsp. all-purpose flour
- 1 (16 oz.) pkg. whole kernel corn (frozen or fresh cut)
- 3/4 c. low-fat milk
- 1/4 c. finely chopped red bell pepper (optional)
- 1/2 tsp. each: salt and sugar
- 1/8 tsp. pepper
- 1 1/2 c. (6 oz.) shredded cheese
Directions

1In a saucepan, melt butter over medium heat.

3Cook 3 minutes, stirring occasionally.

4Stir in flour; cook 1 minute, stirring frequently.

5Add corn, milk, pepper, salt, sugar and pepper.

6Heat to a boil over high heat.

7Reduce heat to low and cook 5 minutes, stirring occasionally.

8Stir in Cheddar cheese just until melted.
