  • 2 Tbsp. butter or margarine
  • 2 Tbsp. minced onion
  • 1 Tbsp. all-purpose flour
  • 1 (16 oz.) pkg. whole kernel corn (frozen or fresh cut)
  • 3/4 c. low-fat milk
  • 1/4 c. finely chopped red bell pepper (optional)
  • 1/2 tsp. each: salt and sugar
  • 1/8 tsp. pepper
  • 1 1/2 c. (6 oz.) shredded cheese

Directions

    In a saucepan, melt butter over medium heat.

    Add onion.

    Cook 3 minutes, stirring occasionally.

    Stir in flour; cook 1 minute, stirring frequently.

    Add corn, milk, pepper, salt, sugar and pepper.

    Heat to a boil over high heat.

    Reduce heat to low and cook 5 minutes, stirring occasionally.

    Stir in Cheddar cheese just until melted.
