- 2 tablespoons butter
- 2 eggs
- 3/4 cup milk
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 (8.75 ounce) can sweet corn, drained
- 1/2 cup shredded Cheddar cheese
Directions

1Melt butter in a large nonstick skillet and set aside to cool slightly.

2In a medium mixing bowl, beat the eggs.

3Beat in the milk.

4Add the cornmeal, flour, sugar, baking powder and salt.

5Mix until just combined.

6Add corn, cheese and melted butter from skillet and mix just until combined.

7Heat the same skillet over medium heat until hot.

8Drop batter by 1/4 cupfuls onto the hot skillet and cook until golden brown, about 2 minutes per side.

9Repeat with the remaining batter.

10Serve hot with syrup.
