Ingredients

  • 1 1/2 c. all-purpose flour (unsifted)
  • 1 1/2 c. yellow corn meal
  • 1 Tbsp. baking powder
  • 1 c. (4 oz.) Cheddar cheese, shredded
  • 4 slices bacon, cooked and crumbled
  • 1 c. milk
  • 1/2 c. honey
  • 1/2 c. Crisco, melted
  • 2 eggs

    Preheat oven to 425°.

    Combine flour with cornmeal, baking powder, cheese and bacon.

    Combine remaining ingredients in separated bowl; beat well.

    Add liquid ingredients to dry ingredients.

    Stir just until flour is moistened.

    Spoon into greased muffin cups, filling about 2/3 full or well-greased and heated heavy cornstick pan, filling almost full.

    Bake muffins at 400° for 15 to 20 minutes and corn sticks at 425° for 8 to 10 minutes.
