Cheddar Fried Squash

- 3 whole Medium Summer Squash Or Zucchini
- 3/4 cups FRESH Breadcrumbs (They Must Be Fresh)
- 1/4 cups Shredded Cheddar
- 2 dashes Salt And Pepper
- 2 whole Eggs, Beaten With A Little Water
- 1/2 cups All-purpose Flour
- 1/2 cups Oil For Frying, I Used Bacon Grease
Directions

1Slice the squash into 1/4 inch thick slices.

2Mix together breadcrumbs, cheese and salt and pepper together on a plate.

3Place the egg and flour on separate plates.

4Heat your oil (I use bacon grease) in a skillet over medium high heat. It should be about a 1/4 inch deep.

5To bread the squash, dip first in egg, then flour, then egg again, then breadcrumbs.

6Gently place in oil and fry until golden brown on each side, 3-4 minutes.

7Drain on paper towels. Serve and enjoy!
