- 2 c. flour
- 1 Tbsp. sugar
- 1 Tbsp. baking powder
- 1 tsp. coarse black pepper
- 1/2 tsp. salt
- 1 1/3 c. milk
- 1/4 c. vegetable oil
- 1 egg
- 1 c. shredded Cheddar cheese
Directions

1Preheat oven to 400°.

2Generously grease 12 muffin cups.

3In large bowl, combine flour, sugar, baking powder, pepper and salt. In small bowl, combine milk, oil and egg until blended.

4Stir into flour mixture just until moistened.

5Fold in 3/4 cup of the cheese.

6Spoon into muffin cups.

7Sprinkle remaining cheese over tops.

8Bake 15 to 20 minutes or until light golden brown.

9Let cool in pan or on wire rack 5 minutes.

10Remove from pan and serve warm.
