- 1 can Cheddar cheese soup
- 1/2 c. sour cream
- 1 small onion, chopped fine
- dash of salt and pepper
- 3 or 4 c. mashed potatoes (may use leftover mashed potatoes; also want mashed potatoes to be thick, not too thin)
Directions

1Combine soup, sour cream, onion, salt and pepper.

2Stir in potatoes.

3Pour into a 1 or 2-quart casserole.

4Bake at 350° for 30 minutes.
