  • 1 can Cheddar cheese soup
  • 1/2 c. sour cream
  • 1 small onion, chopped fine
  • dash of salt and pepper
  • 3 or 4 c. mashed potatoes (may use leftover mashed potatoes; also want mashed potatoes to be thick, not too thin)

Directions

    Combine soup, sour cream, onion, salt and pepper.

    Stir in potatoes.

    Pour into a 1 or 2-quart casserole.

    Bake at 350° for 30 minutes.
