Ingredients
- 2 Tbsp. butter or margarine
- 1/2 c. onions, finely chopped
- 1/2 c. celery, thinly sliced
- 1 c. carrots, thinly sliced
- 2 c. broccoli florets
- 1 c. chicken broth
- 3 c. milk
- 1 c. Cheddar cheese, shredded
- salt and pepper to taste
Directions

1In a large pot, melt butter.

2Add onions and celery; cook for about 10 minutes under medium heat.

3Add carrots, broccoli and chicken broth.

4Cover and simmer 20 minutes.

5Add milk and Cheddar cheese.

6Stir until cheese is melted.

7Add cornstarch to thicken, if necessary.

8Add salt and pepper to taste.
