- 6 eggs
- 1 medium green pepper, chopped (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 2 tablespoons butter
- 2 tablespoons cornstarch
- 1 (15 ounce) can tomato sauce
- 1 (4 ounce) cansliced mushrooms, , drained
- 34 cup flour
- 1 12 teaspoons baking powder
- 12 teaspoon salt
- 1 12 cups shredded cheddar cheese
Directions

1Beat eggs in large mixer bowl until thick.

2Cook and stir green peppers and onion in butter in 2-quart saucepan over medium heat until tender.

3Add tomato sauce and mushrooms.

4Cook, stirring constantly until mixture thickens.

5Reduce heat and cover and simmer 15 minutes.

6Heat lightly greased griddle over medium heat.

7Mix flour, baking powder and salt, beat into eggs gradually.

8Fold in cheese.

9Drop batter by 1/4 cupfuls onto hot griddle.

10Cook until light and fluffy brown on each side.

11For each serving, top 2 or 3 egg puffs with 1/2 cup sauce.
