- 4 (5 -6 ounce) cod fish fillets, skinned
- 6 ounces mature cheddar cheese, grated
- 2 teaspoons coarse grain mustard
- 4 tablespoons single cream
- 2 tablespoons fresh chives
- For the Tomato and Chive Salad
- 6 small tomatoes
- 2 tablespoons fresh chives
Directions

1Preheat the oven to 350°F Season the fish with salt and pepper. Put into an oven proof dish.

2Mix the cheese with the mustard, cream and chives. Spread evenly over each cod fillet.

3Bake for 20 minutes until the fish is cooked and the top is golden.

4Make the tomato and chive salad by slicing the tomatoes and arranging on four plates. Sprinkle with chives and season with salt and pepper.

5Serve the fish on the salad. Accompany with new potatoes if you like.
