- 1/4 c. butter/margarine
- 4 medium unpeeled red potatoes
- 2 Tbsp. dried minced onion
- pepper to taste
- 1/3 c. Cheddar cheese, shredded
- chopped fresh parsley
Directions

1In skillet, melt butter; add potatoes, which have been sliced 1/4-inch thick.

2Add onion and pepper and toss to coat.

3Cover and cook, stirring occasionally, until potatoes are tender, about 10 minutes.

4Uncover; cook until potatoes are browned, about 5 to 7 minutes.

5Top with cheese; cover and remove from heat.

6Let set for several minutes.

7Sprinkle with parsley before serving. Serves 4.
