Ingredients

  • 1 medium onion, diced
  • 4 Tbsp. margarine
  • 4 Tbsp. flour
  • 1 large, cooked potato, diced
  • 1 (13 oz.) can chicken broth
  • 1 (4 oz.) can sliced mushrooms (save liquid)
  • 1 c. milk
  • 1 c. grated Cheddar cheese

Directions

    Saute onion in margarine until tender, but not brown.

    Add flour to make a paste with margarine and onion.
  3. 3
    Gradually stir in milk and liquid reserved from mushrooms, stirring constantly until thickened.

    Add chicken broth and continue cooking and stirring just until boiling.

    Stir in cooked potato and mushrooms.

    Heat through and remove from heat.

    Stir in cheese until melted.
