Ingredients
- 1 medium onion, diced
- 4 Tbsp. margarine
- 4 Tbsp. flour
- 1 large, cooked potato, diced
- 1 (13 oz.) can chicken broth
- 1 (4 oz.) can sliced mushrooms (save liquid)
- 1 c. milk
- 1 c. grated Cheddar cheese
Directions

1Saute onion in margarine until tender, but not brown.

2Add flour to make a paste with margarine and onion.

3Gradually stir in milk and liquid reserved from mushrooms, stirring constantly until thickened.

4Add chicken broth and continue cooking and stirring just until boiling.

5Stir in cooked potato and mushrooms.

6Heat through and remove from heat.

7Stir in cheese until melted.
