- 1 (8 oz.) pkg. cream cheese
- 1 (12 oz.) can evaporated milk
- 1 c. hot water
- 1 stick margarine
- 1 small pkg. lemon gelatin
- 1 c. sugar
- 34 graham crackers
- 1 tsp. lemon extract
- juice of 1 lemon
Directions

1Freeze milk until crystals form.

2Chill bowl and beaters. Dissolve gelatin in hot water and set aside to cool.

3Crush graham crackers and mix with margarine.

4Spread 2/3 of mixture in bottom of 11 x 7-inch pan.

5Cream cheese and sugar.

6Add cooled gelatin and lemon juice.

7Whip milk until stiff.

8Fold into creamed mixture.

9Pour into crust-lined pan and sprinkle with remaining cracker mixture.

10Refrigerate overnight.
