  • 1 1/2 c. graham cracker crumbs
  • 3 lb. cream cheese
  • 2 3/4 c. sugar
  • 1/4 tsp. vanilla
  • 5 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 6 eggs
  • 6 egg yolks
  • 3/4 c. light cream
  • grated peel of 1 lemon
  • juice of 1 lemon

    Reserve 1/2 cup of the crumbs. Press remaining crumbs onto bottom and 2-inches up the sides of a generously buttered 10-inch spring-form pan.
